New Initiative Connects Local Farmers to San Juan Restaurants

A groundbreaking initiative is reshaping how San Juan's restaurants source their ingredients. The Puerto Rico Farm-to-Table Alliance, launched earlier this year, has already connected over 50 local farmers with more than 100 restaurants in the San Juan metro area.

The program, funded by the Puerto Rico Department of Agriculture in partnership with the Puerto Rico Restaurant Association, aims to reduce the island's reliance on imported food while supporting local agriculture and providing restaurants with fresher, higher-quality ingredients.

"For too long, our restaurants have been importing ingredients that could be grown right here," says Hector Morales, director of the Farm-to-Table Alliance. "Puerto Rico has some of the most fertile soil in the Caribbean. We should be feeding ourselves."

Participating farmers receive logistical support and training to meet the quality and consistency standards required by commercial kitchens. The Alliance provides refrigerated transport, quality control inspections, and a digital marketplace where restaurants can place orders directly with farmers.

The results have been impressive. Restaurants report saving an average of 15% on produce costs while receiving ingredients that are fresher — often harvested within 24 hours of delivery — than imported alternatives. Farmers have seen their incomes increase by an average of 25%.

"Before this program, I was selling mostly at farmers' markets," says Luz Medina, who runs a small farm in the mountains of Adjuntas. "Now I'm supplying three restaurants in San Juan. It's changed everything for my family."

The initiative has also had environmental benefits. By reducing the distance food travels from farm to table, the program cuts down on transportation emissions and plastic packaging associated with imported goods. Some participating restaurants have launched "100% local" menu options highlighting ingredients sourced exclusively through the Alliance.

Popular San Juan restaurants like Marmalade and 1919 Restaurant have been early adopters, featuring local produce in their tasting menus and promoting their farm-to-table partnerships as a differentiator.

The Puerto Rico Farm-to-Table Alliance plans to expand beyond San Juan in the coming months, with pilot programs launching in Ponce and Mayagüez. The long-term goal is to have at least 300 restaurants across the island participating by 2028.
